Greek almond biscuits (Amigthalota)

Gluten and guilt free!

Ingredients:

  • 3 egg whites
  • 1 tsp (5ml) vanilla essence
  • 2 tbsp (30ml) stevia crystals or powder
  • 3 cups (420g) almond flour
  • 1 cup flaked almonds

Method:

  • Preheat oven to 160 degrees Celsius.
  • Wisk the egg whites and vanilla essence until fluffy.
  • Add stevia and whisk for another minute.
  • Fold into flour until well combined.
  • Shape into R5 coin sized balls.
  • Coat balls in flaked almonds and place on a baking tray. Makes 18.
  • Bake for 18-20minutes, until golden.
  • Cool on a wire rack and store in an airtight container.
